I did think that might have happened, but wouldn't Jimmy recognise the handwriting?

I figured that Kim might have typed it.

Good theory about Kim rewriting it. Might explain why she started crying after he read it. We already know Chuck didn't like Jimmy.

I was also very surprised. As much as Chuck disliked Jimmy, seems strange that he would even bother. After all, Chuck had already told Jimmy chapter-and-verse how much he hated him. Makes you wonder what would be left to leave in a letter.

Yea, per how this is all leading to Break Bad (which I'm LOVING), and ultimately to SAUL GOODMAN "transformation" I believe the letter contents/message and true message from dead Chuck will ultimately give us Jimmy's dark dive into Saul Goodman, though the theft of figurine seems to already showing us his dark side he just destined for.
