So WHY OH WHY did those 2 go check the boxes in the cargo hold during night time?????? They already knew at that point that the creature attacks only at night......so why not go do the check on the boxes during daytime and possibly burn the creature by exposing it to sunlight??????

Because you have to suspend disbelief to enjoy some films. Also same reason why some people in horror films do stupid things. If they did the smart thing the film would be over in 20 minutes.

In the original Dracula book, vampires weren't affected by daylight so it didn't matter when they would check on the boxes. The movie added the vampire trope (established in the movie Nosferatu) for who knows what reason that vampires were burned by sunlight, but never bothered to compensate for the change.
